This coffee comes from Finca La Linda in Bolivia, operated by the Rodriguez family through Agricafé. Grown at approximately 1500 meters altitude in the Amazon jungle, it consists of the red Caturra variety. The coffee undergoes anaerobic fermentation in temperature-controlled tanks below 25 degrees Celsius, followed by mechanical washing to remove remaining mucilage. Drying takes place in a mechanical dryer over 110 hours with controlled cycles mimicking day and night alternation. Over 60% of the farm is preserved as natural reserve. The coffee offers a fruity and delicate cup with complex notes.
What began in 2014 as Le Pista Cafe Mobile, a bicycle powered coffee cart created by Maxime Richard, has grown into a Montreal roastery with three brick and mortar locations.
