This coffee is from Tolima, Colombia, and features the Typica variety. It is processed using the natural method, which contributes to its distinctive flavor profile. The coffee offers red fruit notes along with peanut M&M's characteristics, delivering a creamy cup with a heavy body.
Cathedral Coffee was founded in 2013 in Portland, Oregon by Austen Tanner, Nate Dillon, and Matthieu Galizia. The team brought roasting in house in early 2022, starting with a 3 kilo Mill City Roasters machine before doubling capacity with a 6 kilo Giesen at their Saint Helens roastery midway between Portland and Scappoose. All coffee is roasted fresh on Tuesdays and Wednesdays and shipped weekly on Thursdays, with an ever rotating single origin lineup sourced ethically and transparently. The business now runs three café locations across North Portland, Scappoose, and Lake Oswego, and has been featured in Portland Monthly's guide to the city's best independent coffee shops.
