This coffee is sourced from the Rotutu community in the Letefoho region of Ermera, Timor-Leste. Produced in partnership with Karst Organics by a collective of over 140 households, this lot is processed using a washed method. The beans are depulped, fermented, washed, and slowly dried to achieve a clean and vibrant profile. The flavor notes include rooibos, citrus, and apricot, offering a bright acidity followed by a tea-like finish.
Dear Green Coffee Roasters was founded in 2011 in Glasgow, Scotland, by Lisa Lawson after a formative period working at Toby's Estate in Australia. The company is named after Glasgow's historic Gaelic nickname, "the dear green place," and sources exclusively specialty grade coffee through trusted importers and direct producer relationships, with Lawson personally visiting farms to verify ethical practices. Dear Green employs in house Q Graders to maintain strict quality control, only releasing coffees that meet its sensory standards. The roastery holds Certified B Corp status and prioritizes traceability, organic certification where possible, and sourcing from women producers.
