This coffee is from Villa Pastora farm in Huila, Colombia, grown at 1600-1680 meters above sea level. Produced by Gerson Mora, this lot features the Aji Bourbon variety processed using the washed method. The cherries are floated and sorted for quality and ripeness, then depulped and fermented in bags for 72 hours before being dried on patios for 16 days. The light roast showcases flavor notes of kiwi, honeycrisp apple, cantaloupe, and cranberry with vibrant tropical and citrus characteristics, soft floral herbals, and a clean, tart finish.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
