This Sumatra coffee underwent anaerobic fermentation with co-fermentation of osmanthus flowers, creating a delicate floral aroma and honey-fruity sweetness. The result is an unusually elegant Sumatra with clean, tea-like characteristics and perfume-floral notes. The coffee is funky yet balanced, offering a unique profile compared to traditional Sumatra coffees.
Spojka Roastery was founded in December 2022 in Prešov, filling a gap for a dedicated specialty roastery in eastern Slovakia. Head roaster and owner Viktor Štefančík is a former barista who regularly represented Prešov coffee shops at the Slovak national championship and competed at the world level, bringing that competition trained palate to his selection and roasting of green coffee. The team targets coffees scoring around 85 points on the SCAA scale and has been steadily sourcing higher scored lots as the operation grows. Their modern cafe near the Torysa river doubles as a roasting space where visitors can watch the process, taste the results, and take packets of freshly roasted beans home.
