About This Coffee

This 100% Arabica coffee originates from Finca Las Flores in the Acevedo region of Huila, Colombia, at 1,750 meters altitude. The Pink Bourbon variety undergoes an experimental multi-stage processing method: initial 36-hour anaerobic fermentation, followed by 12-hour air oxidation, pulping, a second 36-hour anaerobic fermentation, and thermal shock treatment at 50°C to stabilize aromatics. The coffee is dried in dehumidification units to 10.3% moisture content. The light roast profile emphasizes red fruits, green tea, and lemongrass notes with intense sweetness, medium to intensive acidity, and lightweight body.

Phoenix Coffee Roasters

Phoenix Coffee Roasters is a specialty roastery in Dresden, Germany, founded in 2006 by Lars Uhlig under the original name Dresdener Kaffeerösterei and rebranded in 2009. As one of the first specialty coffee roasters in Germany, Phoenix helped advance the movement at a time when it barely existed in the city and remains Dresden's only dedicated specialty roastery. Lars is joined by fellow roasters Frederik Bauer-Stäb and Hauke Mayer, and in August 2025 the team upgraded from their original Giesen to a Loring S35 Kestrel. Phoenix imports most of its green coffee directly from farmers the team has worked with for years and prints the price paid for every lot alongside detailed producer biographies on each label. The range spans espresso, filter and omni roasts as well as limited specialty lots such as a Colombian Gesha, all roasted to bring clarity and origin character to the cup.
