This coffee is produced at El Mirador farm in Pitalito, Huila, Colombia, at an altitude of 1750 meters. It is a Papayo variety processed using a washed method, which includes 24 hours of oxidation followed by 60 hours of fermentation in open tanks. The flavor profile features notes of peach cobbler, pineapple, brown sugar, and toffee. This balanced coffee offers bright yellow fruit notes and a silky texture reminiscent of caramel and dulce de leche.

Night Swim Coffee was established in Charlotte, North Carolina in 2021 through the merger of two pioneering operations: Not Just Coffee, founded in 2011 by James and Miracle Yoder, and Undercurrent Coffee, founded in 2018 by Todd and Erin Huber. United under Black Rock Hospitality, the combined entity operates 15 kilogram and 35 kilogram Loring Falcon and Kestrel roasters that enable precision roasting across multiple coffee concepts. Direct relationships with producers ground their sourcing philosophy, while partnerships with local Charlotte composting companies reflect their commitment to environmental stewardship. Multiple cafes across the portfolio serve as gathering spaces where coffee quality and community connection intertwine.
