The Koke Cooperative in Yirgacheffe brings together around 1,200 farmers who grow local Ethiopian heirloom varieties in shady forest gardens at 1,980 meters. The cooperative is part of the Yirgacheffe Coffee Farmers Cooperative Union and maintains traditional cultivation methods. After careful hand-harvesting and sorting, the cherries are washed and sun-dried with regular turning, a process that preserves the variety's natural brightness and develops a fruity, complex cup with berry, vanilla, and blackberry character. Coffee Circle drum roasts the beans in Berlin to a medium-light profile suited to filter brewing.
