Devoción Coffee – From Colombian Farms to the Heart of Brooklyn

Founded by Colombian-born Steven Sutton in 2006, Devoción Coffee bridges Colombias coffee heritage with the vibrant coffee culture of New York. Steven got tired of drinking stale coffee and decided to fix the problem himself. The Colombian always wondered why his homeland’s incredible beans tasted so different by the time they reached the US. Turns out, sitting in shipping containers for months doesn’t help. Many coffee roasters buy through importers who buy from exporters who buy from cooperatives. He cut out the middle men and started flying beans directly from Colombian farms to his Brooklyn roastery. The mission is simple: to deliver the freshest coffee imaginable by minimizing the time from harvest to cup.

Devoción promises to be as fast as 10 days from origin to cup. Here is how they achieve this:

Brew Guide with Hario x Tri-Up Flow Dripper & Devoción Coffee Citrus Blend

We got our hands on Devoción’s Citrus Blend when the team kindly shipped us a bag to Europe, and of course we had to put it through our favorite brewing device, the Hario x Tri-Up Flow Dripper. The washed process makes for a clean cup. The first sip greated us with this gentle orange blossom aroma. In the cup we found notes of lemongrass which make for a refreshing flavor, especially during the summer months. What we noticed is that the opening of the coffee bag was smaller than what we are used to. Other than that the whole experience from shipping to brewing was seamless.  The green date was 15 July 2025, the roast date was 4 August 2025 and it was delivered to us on 8 August 2025, notably to Europe.

Here is a brew guide on how we got the best results:

  • Grind: 30 clicks Comandante Red Clix (≈ 15 clicks for regular Comandante)
  • Dose: 17 g coffee
  • Water: 255 g total
  • Ratio: ~1:15
  • Brew Time: ~2:00 minutes
  • Gear: Hario x Tri-Up Flow Dripper, gooseneck kettle, scale, timer
Step 1 - Grind
Step 1 · Grind Grind 17 g medium-fine (30 clicks). Prep your dripper and rinse the filter.
Step 2 - Bloom
Step 2 · Bloom Add coffee grounds and 25 g water, let the grounds bloom for 20–30 seconds. Swirl gently.
Step 3 - Pours
Step 3 · Pours Add the rest in 3 equal pours. Keep the stream steady.
Step 4 - Finish
Step 4 · Finish Drawdown should finish around 2:30 minutes. Swirl and enjoy a clean, bright cup.

Coffee Freshness: What It Actually Changes

Freshness amplifies aromatic top notes like citrus, floral, bright tropical fruit. But the rest of your cup still depends on how the beans are roasted and how you brew them. In other words: Devoción’s super‑fast logistics give you a higher ceiling for delicate flavors, but you still need the right roast level and extraction to taste them. Sustainability & Producer Relationships

Devoción Coffee positions itself as a long‑term partner to Colombian farmers. They’ve invested in a Bogotá dry‑mill and manage much of the export and logistics themselves so more of the value can go back to producers. They’re also certified as a B Corporation, which means they’ve committed to social and environmental standards that get measured externally.

Something to note here: Flying green coffee has a bigger carbon footprint than shipping by sea. The tradeoff Devoción leans on is that faster transport helps farmers capture higher prices for fresher, traceable microlots. They found a way to mitigate this: When you check out, you’ll see an option to offset the carbon footprint of your order. The cool part is, Devoción matches whatever you give. Those contributions go straight into agroforestry projects in Colombia that not only capture carbon but also support sustainable farming practices.

Beyond certification, Devoción has been working on the ground in Colombia and the U.S. to actually back up those promises. They’ve rolled out training programs for more than 150 producers, giving farmers tools to improve quality and negotiate better prices. They also set up a Coffee Knowledge Center in Gachetá, Cundinamarca, where students can learn processing, roasting, and brewing — basically creating a pathway for the next generation of coffee professionals.

On the environmental side, they’ve introduced systems to monitor waste, water, and energy use, and switched their U.S. operations to renewable energy. The company also supports agroforestry projects and even encourages staff to volunteer in coffee-growing communities, so sustainability is something woven into everyday operations.
