About This Coffee

This coffee comes from Cañas Verdes in the Chiriquí highlands of Panama, produced by Abu Coffee. It is a Catuai variety processed as a natural with a multi-phase fermentation method - the cherries are fermented, partially dried, then undergo further fermentation before being fully dried to 10% moisture. This process creates deeper, more complex notes in the cup featuring red grape and raspberry. The coffee is described as complex, rich, sweet, and clean for a natural processed coffee.

Every batch is roasted to order, with a deliberate focus on brightness, sweetness, and flavor. Rose sources top end specialty lots through direct relationships with farmers in Panama, Colombia, Ecuador, Ethiopia, China, and Indonesia. The name represents a duality Matt finds in great coffee: something simple and familiar on the surface, yet layered and complex underneath. It is a small, independent roastery with no shortcuts and no cheap blends.
