This decaffeinated coffee originates from the Meseta de Popayán region in southwestern Cauca, Colombia. Sourced from 65 small-scale farmers in the area, the coffee is grown at altitudes of 1700-2000 meters in volcanic soil with cool, rainy conditions. The varieties include Castillo, Caturra, and Colombia. The coffee undergoes washed processing followed by E.A. (Ethyl Acetate) decaffeination using a natural sugar cane method. The region produces two harvests per year, resulting in a balanced, deep, floral, and caramellic character with flavor notes of baked apples, cinnamon, molasses, and cashew nuts.
