This single origin coffee is from the Espirito Santo region of Brazil, specifically from the Bateia district at 900-1000 meters elevation. The coffee is grown by Marcos Tomazini, a generational coffee farmer operating the farm his father Antonio purchased 50 years ago. It features Yellow and Red Catuai varieties processed using the pulped natural (honey) method. The cherries are depulped with mucilage partially retained, then dried in semi-open greenhouses with hourly monitoring. The cup profile presents white nectarine, sugarcane, and raisin notes with enhanced sweetness and body. The farm produces approximately 500 bags annually alongside other crops.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
