It is a mixed variety Arabica processed using an anaerobic natural method with 36 hours of limited oxygen fermentation and dried on patios for about 20 days. The roast is moderate, yielding a fruit-forward cup profile with notes of raspberry, chocolate ganache, blackberry, and malt, suited for both filter and espresso extraction.
