It is a Landrace variety processed using an anaerobic natural method involving 36 hours of limited oxygen fermentation and drying on raised beds. The roast profile is an expressive light Nordic-style roast. Flavor notes include blueberry, mead, cranberry, mango, and nectar with a traditional yet modern profile.
