A natural + anaerobic processed Catucai variety from Fazenda Sao Pedro da Canastra in the Canastra region of Brazil. The farm is a modern project focused on consistency, careful production, and environmental preservation. Fermentation is controlled using selected yeasts with defined timing. The cup profile is vibrant with grapes, dark cherries, crisp green-apple acidity, and warm baked pear sweetness. Roasted as an omniroast, it performs expressively both as espresso and filter.
