About This Coffee

This Brazilian coffee is from Rafael Vinhal's family-owned Vinhal Farm, located at 980 meters altitude in the Cerrado Mineiro region of Minas Gerais state. The coffee is the Topazio variety, a cross between Mundo Nuovo and Yellow Catuai that grows as a low tree with deep yellow cherries. It has been processed using anaerobic washed method with three fermentation stages before washing. The farm has been producing high-quality coffee since 1988 and is certified by Rainforest Alliance, 4C, and Certifica Minas. This filter roast coffee features flavors of papaya, jackfruit, and feijoa with high acidity.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch.
