About This Coffee

A Geisha variety coffee from Café Granja La Esperanza's Cerro Azul farm in Trujillo, Valle del Cauca, Colombia, grown at 1,700–2,000 meters above sea level. This competition-selection lot undergoes a 168-hour anaerobic fermentation with the addition of 5–10% "must" from prior Cerro Azul Geisha fermentations, imparting fruity and liquor-like notes with enhanced body. After fermentation, cherries are mechanically dried at 38–40°C for three days, then sun-dried on raised beds for 12–15 days. Frozen after roasting to preserve freshness.
