This is a Tabi variety coffee from Granja Paraíso 92 in Piendamó, Cauca, Colombia, grown at 1800 meters altitude. The coffee underwent a 72-hour anaerobic natural fermentation in-cherry using carefully selected yeast strains, followed by slow controlled drying. Producer Wilton Benítez operates a pioneering farm-and-processing system with a microbiology lab, bioreactors for controlled fermentation, and precision drying systems. The coffee presents raspberry, lemonade, and orange blossom flavor notes with a smooth, clean finish.
