About This Coffee

A decaffeinated espresso coffee from the Timaná municipality in the Huila region of Colombia, grown at 1700 meters altitude. Produced by ASOMUJER (Asociación de Campesinas del Sur del Huila), a cooperative of 75 women producers founded in 2007. The coffee is made from Castillo, Colombia, and Caturra varieties, and processed using the Sugar Cane (Ethyl Acetate) decaffeination method, where caffeine is removed using ethyl acetate derived from fermented sugars.

Mamam was founded in 2022 in Szczecin, Poland, by Adam Rosołowski and Martyna Sikora, bringing together a team with deep roots in the specialty coffee world. Head roaster Michał Sowiński brings 16 years of industry experience, including time as head roaster and green coffee buyer for Berlin roasters. Adam is a certified Q Arabica Grader and competition judge. The roastery focuses on premium grade specialty coffee, with most offerings scoring above standard specialty thresholds. They source from origins across East Africa and Latin America, guided by values of quality, transparency, and humility. Part of their mission is building broader consumer awareness of what specialty coffee can be.
