The variety is Pink Bourbon, a recent experimental project by Dario. The coffee undergoes washed processing with pulping followed by a 40-hour fermentation, then dried on raised beds under covered patios. The bean size is AAA. Flavor notes include floral scent, cherry, and pomegranate, with signature sweetness characteristic of pink bourbon coffees.
