This single-origin coffee is a Pink Bourbon variety from the El Diviso farm in Colombia. It undergoes a specialized anaerobic fermentation process guided by Lactobacillus, followed by a thermal shock treatment and controlled drying. The flavor profile is complex, featuring notes of passion fruit, pineapple, white peach, and a soft bubblegum finish. When prepared as espresso, it offers a gentle umami quality with mixed berries and a strawberry cream sweetness. This coffee is suitable for both filter and espresso brewing methods.
