About This Coffee

This coffee comes from the El Indio program in Planadas, Tolima, Colombia, where smallholder farmers cultivate, harvest, mill, and process coffee under guidance from Cofinet. The coffee is grown at elevations between 1500-2150 meters above sea level. After harvest, coffee cherries are sorted and sun-dried on raised beds until ideal moisture content is achieved. The finished products are gathered at ASOPEP to be combined and exported or sold locally. This is a naturally processed Caturra variety with flavor notes of nectarine, plum, rum and raisin chocolate, featuring ripe purple fruits like plum and blueberry alongside sugary nectarine jam.

Brothers Daniel Jackson and Corie Sutherland launched Edition Roasters in Sydney as a fusion of Nordic and Japanese coffee and food culture. Both are veterans of the cafe and coffee world, and the friendship they struck up with Rene Redzepi and the Noma team during the restaurant's Sydney residency speaks to the culinary ambition behind the project. Edition follows an omni roasting philosophy, developing profiles that allow each coffee to perform across espresso, filter, and everything in between. Their focus is on micro lot producers and new world processing methods, resulting in fruit forward, tea like, lighter roast profiles.
