This single-origin Colombian coffee from Finca El Paraiso in Cauca's Piendamó region is grown at 1960 meters altitude. The Castillo varietal is processed using washed fermentation with pulp fermentation and thermal shock techniques. The coffee features flavor notes of plum, cherry, raspberry, and juicy characteristics. Produced by Diego Bermúdez using innovative "Paraíso Red Fruit" culture and double fermentation methods for enhanced complexity and consistency.
Geoff Polci, a certified Q Grader whose coffee journey spans two decades, founded Stereo Coffee Roasters in Toronto in June 2018. Polci first roasted coffee in 2004 at a restaurant in Costa Rica and went on to run a series of cafes and co own another roasting company before launching Stereo. The roastery focuses on sustainable, traceable coffees from single farm producers, with a particular commitment to sourcing from women and Indigenous communities. Polci brings a hands on approach to quality, and his Q Grader certification underpins the sourcing and roasting decisions across the lineup.
