This coffee is produced by Wilmer Cubillos at Finca El Rosal in the Huila region of Colombia at 1,650 meters altitude. It is a washed coffee variety called Tabi, a cross between Typica, Bourbon and Timor, developed by Cenicafé. The coffee undergoes 18-hour fermentation in bags followed by depulping, additional 6-hour tank fermentation, washing, and sun drying on raised beds. This is a single origin coffee with elegant floral expression, delicate notes of lavender, honey melon and vanilla.
