This single origin coffee is from Finca El Paraíso in Cauca, Colombia, produced by Diego Bermúdez. The Castillo variety is grown at 1900 meters above sea level. The coffee undergoes an innovative washed anaerobic process with thermal shock, including a 36-hour anaerobic fermentation followed by secondary fermentation with selected microorganisms. A thermal shock using alternating hot and cold water halts fermentation and locks in flavor, while dehumidified drying preserves its creamy body. The coffee features flavor notes of lychee, peach candy, and mandarin, with bright malic acidity, delivering a clean yet fruit-forward profile with clarity, balance, and precision.
