Cauca is a central-western Colombian region known for cool temperatures due to ocean winds and high elevation, with coffee grown largely by indigenous or Afro-descendant communities. Sidra is a cross-breed variety native to Ecuador, reportedly derived from Bourbon and Typica or developed as a hybrid by Nestlé.
