This coffee is from Finca Puerto Alegre in the Quindio region of Colombia, cultivated along the city of Pijao at an altitude of 1450 meters. The coffee plants grow in the shadow of Leucaena trees which provide natural fertilizers. The Gesha variety cherries are hand-picked using a refractometer to ensure perfect ripeness, then subjected to carbonic maceration for 60-72 hours in hermetically sealed barrels at 15-17°C. This process transfers fermenting fruit aromas to the parchment using CO² pressure. The coffee features complex fruity and floral notes typical of Gesha variety, intensified by the carbonic maceration process, with peach, raspberry, honey, and umami flavors.
