This Geisha variety coffee is grown by Jhon Samboni in the Huila region of Colombia at an altitude of 2,000 meters in volcanic soil. The coffee undergoes a unique double fermentation process, where cherries are fermented whole in sealed tanks for 100 hours, then pulped and fermented for an additional 30 hours. This process amplifies the natural characteristics of the bean, resulting in a floral, silky, and sweet cup with distinct notes of jasmine, honey, and tea.
Upside is an independent roastery in Dublin, run by Jamie & Lucy since 2016. Their name is a nod to their North Dublin home and the positive impact they believe coffee can have. They focus on making specialty coffee fun and accessible, working with independent producers to source high-quality beans and create sweet, clean, and vibrant cups.
