The coffee undergoes a meticulous process involving manual harvesting, ozone disinfection, a 36-hour open-tank fermentation, and a 24-hour mucilage fermentation, followed by slow mechanical drying. This results in a clean, balanced cup with a refined flavor profile featuring notes of jasmine, nectarine, mandarin, physalis, and caramel. It is an elegant expression of the Geisha variety, highlighting clarity and natural sweetness.
