This coffee is a Bourbon variety from Granja Paraiso 92 (Finca El Paraíso 92), a family farm located in Piendamó, Cauca, Colombia at 1,950 meters above sea level on volcanic soil near the Puracé Volcano. Produced by Wilton Benitez, the coffee undergoes a highly innovative double anaerobic fermentation process using specific microorganisms and bioreactors, followed by a thermal shock treatment with hot and cold water to enhance organoleptic characteristics. The farm uses controlled fermentation monitoring (temperature, pH, Brix, electric conductivity) to produce distinctive, standardized flavor profiles.
