This coffee is a Geisha variety from the southwest Huila region of Colombia, grown in fertile soils at high altitude. The cherries underwent a meticulous multi-stage fermentation process: first a 24-hour whole-cherry fermentation to enhance natural sugars, followed by 48 hours of anaerobic fermentation in sealed barrels, then a single wash before a slow 22-day drying period on raised beds reaching 10-11% moisture content. The result is a coffee that showcases exceptional origin quality through precise post-harvest technique.
