This coffee is produced by María Belén Díaz at the Resinas farm in Acevedo, Huila, Colombia. The variety is Papayo. The processing involves a 36-hour pre-fermentation in cherry in GrainPro bags, followed by depulping and a 36-hour fermentation in mucilage. After a two-stage washing process, the beans are sun-dried on canopies for 12 days, then stabilized for 15 days in a dark room in GrainPro bags. This washed process develops fruity and floral notes with a rich and complex taste profile.
