A single-origin Colombian coffee from Finca Santa Bárbara, a 14-hectare farm located in La Marquesa, Timbío, Sotara, Cauca, at 1850 meters altitude. The farm is run in partnership with Fundacion Mundo Mujer. The Pink Bourbon variety is processed using a washed method with a controlled bioreactor fermentation step: after pulping, beans are placed in a stainless-steel bioreactor for 48 hours in an oxygen-rich environment before being washed three times. Drying is done using electric dehumidifying dehydrators. Known for floral and fruity character with bright, delicate, and complex attributes.

Mamam was founded in 2022 in Szczecin, Poland, by Adam Rosołowski and Martyna Sikora, bringing together a team with deep roots in the specialty coffee world. Head roaster Michał Sowiński brings 16 years of industry experience, including time as head roaster and green coffee buyer for Berlin roasters. Adam is a certified Q Arabica Grader and competition judge. The roastery focuses on premium grade specialty coffee, with most offerings scoring above standard specialty thresholds. They source from origins across East Africa and Latin America, guided by values of quality, transparency, and humility. Part of their mission is building broader consumer awareness of what specialty coffee can be.
