This single origin coffee from Colombia undergoes sugarcane decaffeination using the Ethyl Acetate method. Sourced from the Huila region at elevations between 1600-1800 meters, it features the Pink Bourbon variety. Prior to decaffeination, the coffee undergoes a complex anaerobic fermentation process lasting 60 hours with added mosto, followed by thermal shock treatment and pristine precision drying. The sugarcane decaffeination process is considered one of the most natural and least flavor-disruptive methods available. The cup profile reveals orange rind, vanilla, bergamot, and pomegranate notes. Filter roast only.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process.
