This coffee comes from Campo Hermoso, Edwin Norena's farm in Circasia, Quindío, Colombia. The Caturra variety cherries were harvested at over 20° Brix and underwent a multi-stage experimental fermentation process: initial carbonic maceration, followed by co-fermentation with banana using selected yeasts under controlled temperature and pH conditions, then processed as honey and dried in a greenhouse. The cup profile features ripe banana, burnt sugar cream, and subtle rum notes, with a creamy mouthfeel and deep sweetness. Tagged as Omni Roast.
