The Tumbaga Sugarcane Decaf is decaffeinated using ethyl acetate (EA), a naturally occurring compound derived from sugarcane. The sourcing follows harvest times, typically from Tolima or Cauca during summer months and from Antioquia or Eje Cafetero regions in winter. The coffee is selected for high body, high sweetness, and low acidity before decaffeination. The flavor profile features molasses, red apple, caramel, lemon, soft tobacco, and macadamia, creating a balanced, chocolatey, and sweet cup.
