This coffee is a Pacamara variety from Colombia, produced by Wilber Gómez. It is processed using a semi-washed (honey) method, which involves leaving some mucilage intact after pulping, followed by 48 hours of controlled fermentation. This process enhances the coffee's natural sweetness, softens its acidity, and creates a structured, weightier mouthfeel. The cup features floral aromatics and a bright, citrus fruit acidity, characteristic of the Pacamara variety.
