This coffee is a Borbón Amarillo (Yellow Bourbon) variety from San Agustín in the Huila department of Colombia. The region is recognized for its high quality coffees due to mineral-rich volcanic soils. The coffee undergoes an anaerobic co-fermentation process with red fruits, followed by washed processing. This experimental processing creates intense and complex aromatic layers. The flavor profile features sweet honey, exotic yellow fruits, orange, melon, cherry, white chocolate, molasses, and jasmine notes.

Noti Coffee is a specialty roastery in Palma de Mallorca led by Marco, a Costa Rican roaster with over 20 years of experience behind the bar and the drum. He roasts single origins on site, working only with coffees scoring 85 or above on the SCA scale, including exclusive varieties like Geisha. Beyond selling beans, Noti runs guided tasting experiences where visitors sample eight or more coffees and walk through the full bean to cup process with Marco. The space combines the working roastery with a tasting room and kitchen.
