This Gesha variety coffee is produced by Yoiner Mosquera in the Palestina region of Huila, Colombia. It undergoes a unique anaerobic natural process, starting with overripe cherry picking, a 12-hour open-air drying phase, followed by 60 hours of anaerobic fermentation in a sealed container, and finishing with 20 days of drying on raised beds in a greenhouse. The cup profile is complex and layered, featuring notes of strawberry jam, raspberry, meyer lemon, and earl grey tea, with a floral character and a bright, zingy lime finish.
