About This Coffee

A single origin coffee from Costa Rica, produced by farmer Alejo Castro Kahle at Hacienda Colima at 1450 meters altitude. The Typica variety is processed using anaerobic fermentation — whole cherries are fermented in oxygen-free containers filled with CO2, then dried on raised beds with daily turning until moisture reaches 11.5–10.5%. Harvested December–March 2024–2025. Flavor notes include caramel, wine, malt, orange, grapefruit, cherry, raspberry, and lime.
