This coffee is a microlot from Costa Rica, produced by Dona Francisca and Oscar Chacon at their Las Lajas micro mill in the foothills of the Poas volcano in the Central Valley. The coffee is processed using the Red Honey method, where mucilage is partially retained during drying. This is a light roast coffee with flavor notes of grilled pineapple, hibiscus, and agave. The Chacon family has been producing honey-processed coffees since 2000 and measures brix content to determine optimal cherry ripeness for a sweet, fruit-forward profile.
Alvarium Roasting launched in January 2022 as a sister venture of Alvarium Beer Company in New Britain, Connecticut. The business is owned by Kate Bugnacki, Michael Larson, and Brian Bugnacki, with Jacob Failla directing roasting operations. All coffee is roasted to order weekly and sourced ethically from multiple countries, with the blends carrying bee and nature themed names that reflect the parent brand's identity. The roastery operates a retail café at its New Britain headquarters alongside a second location at the GastroPark in West Hartford, and the partnership with the brewery creates opportunities for beer and coffee collaborations.
