About This Coffee

This decaffeinated coffee is a curated blend from Huila, Colombia, featuring 12 different lots from 11 smallholder producers including Yaneth Trujillo, Javier Pajoy, Andres Guarnizo, Carlotta Quinayas, Cristian Pajoy, Edilma Quinayas, Aldemar Quistal, Alex Osorio, Neil Guarnizo, Alberto Caldon, and Johanna Palacios. The coffee is decaffeinated using the Sugar Process, where ethanol is created from fermented sugarcane molasses and mixed with acetic acid to create Ethyl Acetate. The coffee is steamed to open pores, then placed in an EA solution that bonds with chlorogenic acid salts to extract 97% or more of the caffeine. The coffee features flavor notes of dark chocolate, cherry, and almond.
