About This Coffee

This decaffeinated coffee comes from Popayán in the Cauca region of Colombia, grown at elevations between 1,500-2,070 meters. Approximately 75 medium-scale coffee producers contribute to this program through long-term relationships with supply partners. The coffee features Caturra, Castillo, and Colombia varieties. After careful cherry selection, the coffee is de-pulped and thoroughly washed to remove mucilage, then dried on raised beds for 5-7 days. The decaffeination uses a natural sugar cane process at the Descafecol plant in Manizales, Colombia, involving immersion in water with a natural ester from sugar cane to extract caffeine. This method avoids excessive temperatures and preserves the coffee's inherent attributes. The flavor profile features juicy mandarin and ripe red berry notes on a base of milk chocolate, caramelized apricot, and a syrupy body.
