About This Coffee

A medium-roast coffee from the Pluma variety grown in San Agustin Loxicha, Oaxaca, Mexico at 1700 masl. Produced by an all-women team of mostly Indigenous producers (Xha Goot 5x lot) within the Pergamineros project, on a 2.1 ha farm using shade-grown, organic practices. Processed via anaerobic fermentation followed by washed processing. Flavor notes include tamarind, Asian pear, and cacao nibs, with a bold body, balanced acidity, and characteristic chocolatey sweetness of the Pluma variety. Summer 2025 crop, imported by Semilla.

They roast on a Loring using smart roast technology, producing light to medium profiles that emphasize clarity and sweetness across single origins from Ethiopia, Kenya, Colombia, Guatemala, Costa Rica, and El Salvador. The team includes Q graders and certified SCA professionals, which shows in the detailed origin information and transparent pricing they share with customers. Regular public cuppings and education workshops are a core part of the operation, alongside a wholesale program that supplies specialty cafes across British Columbia.
