This coffee comes from Finca Soledad, located 50 km north-west of Quito on the Andean slopes of the Intag valley in Imbabura, Ecuador, at 1515 meters altitude. Produced by farmer Jose Ignacio Jijón (Pepe), it features the Sidra variety — a hybrid of Red Bourbon and Typica. The processing is a Natural "Tasos XTD" method, a complex Wave process involving biodynamic fermentation, double fermentations (lactic wet cherry and mucilage), controlled slow drying, and a stabilization rest period in Grain Pro bags. Flavor notes include Muscat Grape, Jasmine, and Pineapple. Categorized as a filter coffee.
