About This Coffee

This coffee is a rare Laurina varietal from Colombia, produced by Edinson Argote at 1850 meters altitude. Laurina is a natural mutation of the Bourbon variety, distinguished by its low caffeine content and elegant, tea-like cup profile. The beans undergo an innovative washed thermal shock process: after 24 hours of controlled oxidation, cherries are dry-pulped and washed with water heated to 50°C, then fermented for 72 hours at temperatures below 25°C using selected yeast strains. The coffee presents delicate floral and sweet notes of rose, marshmallow, and foam strawberries.
