About This Coffee

This is a Colombian coffee from the El Jaragual farm, produced by Jorge Mira. It is a Rosado varietal grown at 1500 meters above sea level. The coffee undergoes an innovative thermal shock and yeast-inoculated processing method, involving 24-hour oxidation phases, pulping, thermal shock washing at 45°C, 36-hour fermentation with selected yeast below 25°C, and 76 hours of drying at 40°C. The result is a bright and vibrant cup with tropical complexity, featuring bold passion fruit, creamy mango lassi notes, and a subtle hop aroma.

Ben Stokes founded Colours Coffee from Hullavington in Wiltshire after apprenticing under UK Barista Champion Maxwell Colonna at Colonna and Smalls in Bath. Over several years there he honed his skills in espresso preparation and brew methods before his focus gradually shifted toward roasting. A trip to Colombian coffee farms deepened his understanding of the full bean to cup journey. The roastery uses a colour coding system to categorize its single origin offerings, making the range more navigable for customers who might find specialty coffee terminology intimidating. Current offerings include anaerobic processed beans from Colombia's Finca Chorro Alto, washed El Salvador, and natural Burundi. The venture shares space and community with the nearby Flying Monk Brewery.
