This coffee is a Pink Bourbon varietal from El Jaragual farm in Amalfi, Antioquia, Colombia. The farm spans 150 hectares in the northern Colombian Andes and is managed by Jorge Mira, cousin of Jonny Martinez from MiCafe. The coffee undergoes a sophisticated washed processing method involving 24-hour cherry oxidation, thermal shock washing at 45°C, 36-hour wet fermentation with specific yeast culture, washing at 5°C to seal fermentation, and 76-hour controlled drying. The farm cultivates seven varieties including Pink Bourbon, Geisha, Typica Mejorado, and Sidra, shaded by plantain trees and native agroforestry species. The roast is optimized for filter brewing.
