About This Coffee

A single-origin coffee from Finca El Salvador (FES) in the Santa Ana region of El Salvador, produced by Rodolfo Ruffatti Batlle at 1350–1670 m.a.s.l. The Red Bourbon variety undergoes a 96-hour natural Kombiscus process, where cherries are submerged in Jun Kombucha (green tea and honey) mixed with hibiscus tea, then dried naturally. This experimental fermentation develops vibrant acidity and layered sweetness. Tasting notes include cognac, hibiscus, dried cranberry, gingerbread, and dark chocolate. Roasted as an omni profile suitable for both espresso and filter.
