El Triunfo Decaf is a Pink Bourbon coffee from Huila, Colombia, produced by Jose Uribe Lasso on his farm El Triunfo at 1650–1850 MASL. After harvest, cherries undergo flotation, 32-hour anaerobic fermentation, oxidation stages, and immersion in coffee cherry mosto before being washed and decaffeinated using Ethyl Acetate (a natural sugarcane derivative). Dried on raised beds for 18–20 days. Offered as a Filter Roast with tasting notes of Orange Blossom, Rose, and Moscato Wine.
